Peach Berry Cobbler

There is just something magical about peaches. When they’re in season, they are truly nature’s candy! They go great in a number of dishes, but my absolute favorite is this peach berry cobbler I created.


There’s little I’d rather do than just sit down to a warm bowl of it and enjoy some quiet time all to myself! Nonetheless, the time has come to share this cobbler-y goodness with the world.

One of my favorite breakfasts used to be my Homemade Guilt Free Waffles topped with peaches and berries (recipe coming soon!) A while back I was entertaining for a group while on vacation and I didn’t have a waffle iron nor the time to make a bunch of waffles at the same time. 


Like so many great recipes, this was created out of necessity. I invented this option, an upside-down version of my waffles, baked into a warm cobbler. Since it’s free of high fat dairy, oil, sugar, and salt, it makes for a perfectly healthy breakfast. Yet it’s sweet enough to serve as a dessert with your favorite nice cream recipe or all by itself. 


You can even make a single serving and cook it in your air fryer!


Enjoy!

Filling Ingredients:

3 cups peaches, sliced

1 cup berries (fresh or frozen, any kind will work!)

1 cup applesauce

2 Tbsp flax seed (optional)


Topping Ingredients:


2 large ripe bananas, mashed 

1/4 cup almond milk

2 cups oats

1 Tbsp cinnamon

1 tsp cardamom

Instructions:

Preheat oven to 350 degrees. Combine all filling ingredients directly in a 8×8 or 9×9 baking pan. In a mixing bowl, combine all topping ingredients. Put the topping ingredients on top of the filling. (I told you it was easy!) Bake at 350 for 25-30 minutes until topping is starting to brown and fruit is bubbling around the edges.


If you'd like to make a generous single-serving, cut the recipe in half, bake in an oven-proof baking dish and cook in your air fryer. 350 degrees for 12 minutes!
